If a dish is yellow, then it is likely to have saffron and ginger as its primary spices, whereas red coloured dishes will have chilli, harissa or sweet paprika as their main flavour.
Our food tour of Marrakech starts at the Café de France, which is situated on the main square of Jemaa El Fna. This café is an institution in Marrakech being one of the best-known cafes in the area, making it a popular meeting point for both locals and tourists.
Once we have departed the Café de France, we will head for one of the oldest food markets in the area, where you can see the vast array of stalls selling all kinds of ingredients, and also sample some authentic tagine dishes.
Marrakech Jewish Heritage Tour
You may be surprised to learn that although Marrakech is one of Morocco’s former imperial cities, it also has a historical Jewish legacy.
Marrakech is home to a Jewish neighbourhood which is walled, like all of its other neighbourhoods – and it is situated next to the royal Kasbah. This sheltered area allows the Jewish community to sustain their culture and also offers them protection.
The Jewish neighbourhood has its own Souk, the Place des Ferblantiers, where Jewish craftsmen make tin teapots, trays and lanterns – and there is also a jewellery Souk.
There is one Synagogue left in Marrakech, which is open every day except Saturday, which has a beautiful blue and white tiled patio. If you are lucky, you may even get to hear an ancient Jewish song as the worshipers prepare for prayer.
After we have visited the Synagogue, we will go and pay our respects at the Miara Cemetry, which is the biggest Jewish Cemetery in Marrakech. In amongst the sea of white tombs, you will find important names such as Mordechai Ben Attar and Kabbalist Hananiah Ha-Cohen (Patron Saint of Marrakech).

You will visit Marrakech’s most famous landmark, the 12th Century Koutoubia Mosque, whose minaret has been standing guard over the city since it was built sometime in the 12th century. The spire of brass balls is filled with a special mineral salt to prevent them from oxidising, and the wooden stick in front of the spire points towards Mecca. If you are a non-Muslim then you won’t be allowed to enter the Mosque, but you may catch a glimpse inside when the doors are opened for prayers.
